Ingredients;
- 350gm groundnut sauce
- 1 ltr of water
- Salt
- Sweet potatoes
- An onion
Optional
- Curry powder
- Chili powder
The Groundnut sauce:
- With the paste in a pan, add warm water in small amounts till paste is blended and lumps dissolved
- Add the rest of the water until desired thickness of sauce
- Add ground onions if needed
- Bring to boil for about 6 to 10 minutes while stirring, add salt, curry and chili dissolved in a spoon of water
- The differences in paste create different thickness (paste vs powder) and may require a varying cooking time
The sweet potatoes:
- Peel the sweet potatoes and steam them in a pan for about 35-45minutes
- Reduce heat and cook for another 15min
- Remove from the fire and serve
- A potato is ready when a knife can go through smoothly and is sweet. A raw potato will be hard with a starchy taste
Your meal is now ready to plate. Do not forget to include your favorite steamed vegetables or avocado!
