Oh Sweet Potato

Nothing beats local food and I love it. When the craving hits there’s no substitute and in the vast realm of Uganda’s local food, sweet potatoes and groundnuts are a pair meant to be…

Ingredients;

  • 350gm groundnut sauce
  • 1 ltr of water
  • Salt
  • Sweet potatoes
  • An onion

Optional

  • Curry powder
  • Chili powder

 

The Groundnut sauce:

  • With the paste in a pan, add warm water in small amounts till paste is blended and lumps dissolved
  • Add the rest of the water until desired thickness of sauce
  • Add ground onions if needed
  • Bring to boil for about 6 to 10 minutes while stirring, add salt, curry and chili dissolved in a spoon of water
  • The differences in paste create different thickness (paste vs powder) and may require a varying cooking time

The sweet potatoes:

  • Peel the sweet potatoes and steam them in a pan for about 35-45minutes
  • Reduce heat and cook for another 15min
  • Remove from the fire and serve
  • A potato is ready when a knife can go through smoothly and is sweet. A raw potato will be hard with a starchy taste

Your meal is now ready to plate. Do not forget to include your favorite steamed vegetables or avocado!
