Kidney on the Side

Kidney is a delicacy that I enjoy once in a while and this is a quick way to enjoy it while sipping on a chilled glass of wine.


  • Kidney
  • Mushrooms
  • Soy sauce
  • Margarine
  • Tomato paste
  • Ginger
  • Rosemary
  • Onion
  • Salt

The Kidney:

  • Prep the kidney, skin it then core (cut it in half and remove the white core) rinse well under running water and drain
  • Heat a little margarine/olive oil in a pan and add onions and kidney, stir for about 5 minutes on each side
  • Add the mushrooms and stir for about 3 minutes
  • Add a little soy sauce, spices and salt simmer for 3 minutes
  • Add tomato paste, a little water and simmer till ready on low heat till kidney is tender and liquid is reduced
  • Serve with Irish potatoes
