Kidney is a delicacy that I enjoy once in a while and this is a quick way to enjoy it while sipping on a chilled glass of wine.
Ingredients;
- Kidney
- Mushrooms
- Soy sauce
- Margarine
- Tomato paste
- Ginger
- Rosemary
- Onion
- Salt
The Kidney:
- Prep the kidney, skin it then core (cut it in half and remove the white core) rinse well under running water and drain
- Heat a little margarine/olive oil in a pan and add onions and kidney, stir for about 5 minutes on each side
- Add the mushrooms and stir for about 3 minutes
- Add a little soy sauce, spices and salt simmer for 3 minutes
- Add tomato paste, a little water and simmer till ready on low heat till kidney is tender and liquid is reduced
- Serve with Irish potatoes
