So it is the day after you hosted a hearty BBQ, you have left over BBQ chicken in the fridge and you want to make healthy choices today to make up for all the rules you threw out last night. This is a great way to down the left overs and keep the body healthy.
Ingredients;
- Left over BBQ
- Tomatoes
- Cucumber
- Vinegar
- Onions
- Lemon juice
- Lettuce
The salad:
- Shred the BBQ and warm if desired
- Add finely chopped onions to a bowl with lemon juice and mix
- Add cucumber tomatoes lettuce vinegar and chicken and toss the mixture
- Toss the lettuce leaves in vinegar and plate
- Place the vegetables on the bed of lettuce and serve
