So 2017’s Independence Day led us to a BBQ at the most high’s house (A.K.A The Jedi), the current country state of affairs was a topic that crept into the conversation often and as we pondered on how real the possibility of our democracy turning into a hierarchy we had chicken muchomo…
Ingredients
- Chicken
- Salt
- Onions
- Garlic
- Chicken masala
- Olive oil
The Easy #55
- Ground the onions and garlic in a bowl(you want to get as much juice as possible)
- Pour in the salt, chicken masala, olive oil and mix.
There are many variations to this recipe but this replicates the simple but satisfying street side muchomo.
- Add the chicken to the marinade and leave it for about 30 minutes to an hour
- Light up the grill and let the chicken cook for about 25 minutes.
Remember to turn the chicken periodically and check that the heat on the grill is not searing, this will brown the chicken on the outside yet it’s not ready on the inside.
This Ugandan street food delicacy is best enjoyed with a cold Ugandan beer or Spirit and great conversation with friends!
